Strawberry Spinach Salad 6

This delicious salad is my go-to side item for any summer potluck or barbecue. Every time I serve it, someone asks for the recipe. I’m happy to share it, and always mention that if you are short on time, buy candied cashews and wonton salad toppers. You can skip to step 3, but the homemade strawberry dressing is worth the effort and is the star of the dish.

Strawberry Spinach Salad

1/3 cup sugar
1 cup cashews
6 ounces wonton wraps
1 head iceberg lettuce, chopped
8 ounces spinach leaves
½ cup cooked and crumbled bacon
½ cup chopped red bell pepper
1 purple onion, chopped
1 cup sliced strawberries

1. Toss cashews in sugar, and cook over medium heat until sugar melts and coats nuts. Stir constantly to prevent scorching.
2. Cut wontons into strips and fry in hot oil until golden brown.
3. Toss vegetables and bacon.
4. Add won tons, nuts and dressing just before serving.

Strawberry Dressing

½ teaspoon salt
2 tablespoons red wine vinegar
3 tablespoons sugar
½ cup vegetable oil
¼ teaspoon dry mustard
½ cup seedless strawberry jam

1. Blend dressing ingredients well and toss with strawberry salad just before serving.
